What is Beef Butter?
Beef Butter is a texas term. To make beef butter you trim the brisket by cutting the fat to pencil-thin, season it, smoke it unwrapped for 6 hours, and then wrap it and put it back in the smoker for 1-6 hours depending on the size. Wrapping it up makes the fat on the brisket soak up all the juices and caramelize the fat. The process of smoking the meat and wrapping it up is called making butter.
Beef Butter BBQ is rated Madison, Wisconsin's best BBQ. This restaurant takes an approach of being present and up to date with its environment. A locally owned restaurant and meat market that is thriving on the East side of Madison.
